teas

The Chinese character for tea is '茶', originally written with an extra stroke as '荼' (pronounced "tú", used as a word for a bitter herb), tea is generally divided into categories based on how it is processed. At least seven different types are produced:
White: wilted and unoxidized.
Yellow: unwilted and unoxidized but allowed to yellow.
Green: unwilted and unoxidized.
GABA: wilted, bruised, partially oxidized and non-oxygen fermented.
Oolong: wilted, bruised, and partially oxidized.
Black: wilted, sometimes crushed, and fully oxidized.
Post-fermented (Dark): green tea that has been allowed to ferment/compost.
